This, as all recipes on my blog, is a healthy version of one of my favourites: banana bread! This creation is the quickest, easiest recipe, with not much cleaning required! I have made this twice in the past week - one made into muffins for a 2 year old's birthday - and no one knew they were healthy! They were all saying how moist they were, and were shocked when I told them there was no oil or butter! The hint of cinnamon gives it a more interesting flavour, however you can omit the cinnamon and it tastes just as good! You can also swap the oat flour for more wholemeal spelt flour if you don't have oat flour, and it tastes fabulous! This recipe calls for 50-100g of chocolate: I, of course, use 100g for a very chocolatey banana bread, however 50g would be a perfect amount too, if you prefer a less chocolatey experience;) Or, of course, you could leave the chocolate out all together! Chocolate Chunk Cinnamon Banana Bread Ingredients: – 3/4 cup oat flour –1/2 cup wholemeal spelt flour – 3tbsp sweetener (I have used sugar and syrup, and they both work fine) – 2.5tsp ground cinnamon – 3tsp baking powder – 1/2tsp baking powder – 2 medium bananas, mashed – 2 eggs, whisked – 1/2 cup full fat greek yoghurt – 1/2 cup almond (or other) milk – 50-100g dark chocolate, chopped (can leave out, or substitute with cacao nibs) Method: 1. Preheat oven to 180 degrees Celcius. 2. Combine all dry ingredients in a medium mixing bowl. 3. Combine all wet ingredients in a jug. Pour into dry ingredients and mix with a wooden spoon until just combined. 4. Stir chocolate through batter. Pour into a small bread tin lined with baking paper, sprinkle with poppy seeds or sliced banana if desired, and bake for approximately 40 minutes. Enjoy! Speed it up: Instead, pour into a lined muffin tin, and bake for about 12 minutes. |
