This recipe was actually meant to be a brownie recipe, but it turned out more like a cake! Not too sweet, very rich and cocoa-y with real chocolate in it, and a crunchy nut&seed topping. Using no white flour, butter, and healthy oils, this cake is good for you, filling and delicious! Sure to fix any chocolate craving;) Rich Chocolate Cake with Nut&Seed Topping Ingredients – ½ cup rolled oats – ½ cup wholemeal spelt flour – 3tbsp coconut flour – ½ cup cacao powder – 6 squares loving earth caramel chocolate (or any chocolate) – 1tbsp baking powder – 2 large eggs – ½ cup +1tbsp honey/agave/maple syrup (add more if desired; this is not very sweet) – 4tbsp coconut oil – Just less than ½ cup almond (or other) milk – 2/3 cup full fat greek yoghurt – 1tbsp chia seeds (can omit) – 1/3tbsp vanilla extract – Walnuts, pumpkin seeds, sunflower seeds, for topping Method: 1. Preheat oven to 180 degrees Celcius 2. Blend all ingredients in a food processor. 3. Pour into a medium cake tin greased with coconut oil, sprinkle with nuts and seeds, and bake for approximately 30 minutes. |
