Every time I make it, it is either demolished within the day, or almost finished and then the rest is eaten by myself at school, with the help of my friends who keep requesting me to make it again. Moist and fluffy, with just the right amount of sweetness, this cake could not get any better! Of course, the strawberries could be omitted, or replaced with other berries or chocolate - I used raspberries in my one today!
Strawberry Vanilla Protein Loaf
Ingredients:
- 1 cup wholemeal spelt flour
- 1/2 cup white flour
- 3 scoops vanilla protein powder (this will be the flavour of your cake so make sure it is a great tasting one)
- 3tsp baking powder
- 2/3-3/4 cup almond milk
- 1/3 cup greek yoghurt
- 1/4 cup coconut oil, melted
- 1/4 cup agave or other liquid sweetener
- 1 egg
- punnet of strawberries
Method:
1. Preheat oven to 170 degrees
2. Sieve dry ingredients into a mixing bowl.
3. Mix remaining ingredients except for strawberries, pour into the mixing bowl and combine.
4. Chop strawberries and fold through the batter.
5. Pour into a lined or greased loaf tin (or other tin) and bake for 45 minutes or until firm.
