The secret to the volume is... zucchini and egg whites! It changes the taste only ever so slightly, and the texture is a bit different but I have grown to absolutely love it. What a way to get in some vegies at the start of the day! I started off only adding about ¼ of a zucchini as I wasn’t used to the texture, but now I’m crazy about it and can add a whole small zucchini! It just depends on how you like it:)
Voluminous Cacao Oatmeal

Makes 1 serve
Ingredients:
- ½ cup oats
- ¼ - 1 whole small zucchini, depending on preference
- 1tbsp cacao powder
- ½ - 1 tbsp agave syrup
- 1 cup milk of choice
- 2 egg whites
- Nuts, seeds, dried fruit, peanut butter, optional, to serve
Method:
- Combine first four ingredients in a medium mixing bowl. Add milk and stir.
- Microwave on high for 4 minutes.
- Stir. If mixture isn’t thick enough, microwave for a while longer. If you would like your oatmeal even more voluminous, add a little more water and microwave for longer.
- Stir in egg whites thoroughly. Serve with toppings.
