I have been wanting to try making a pastry with spelt flour and yoghurt for agessss but I never found the time until yesterday! I was very unsure about the pastry as I don't make pastry often, let alone without the butter! But it turned out perfectly - crunchy, crispy and flavoursome! The recipe for the filling is adapted from the recipe our family's babysitter used to make for us when we were younger. Nothing ever used to beat those creamy, fluffy quiches from a little café, until I tasted this:0 But it doesn't even have any cream!
