Breakfast is definitely my favourite meal of the day! I think it’s actually a big part of my recovery – I enjoy creating delicious healthy breakfasts which helps me to enjoy the eating part! I look forward to the weekends to create delicious breakfasts that take too much time for a school day. This morning I made dark chocolate raspberry pancakes – and wow they were delicious! Not too sweet; very fluffy; if you make these and don’t like them there is seriously something wrong with you! Here’s the recipe!
Dark Choc Raspberry Protein Pancakes To soak overnight: – 1/2 cup rolled oats – 1/4 cup custard or yoghurt – 1/4 cup milk – 1/4 cup egg whites – 1 scoop protein powder (can omit) – 1/2tsp baking powder To add in the morning: – handful of raspberries – 1tbsp cacao powder For the toppings: – 1tbsp cacao powder – 1tbsp agave (or other sweetener) – strawberries, chopped – cacao nibs Method: 1. Mix first set of ingredients and refrigerate overnight. 2. Heat raspberries in the microwave and strain most of the liquid out. Put pulp into pancake batter. Blend with a hand blender. 3. Cook half the batter into small pancakes on a pan over low-medium heat. 4. Mix the 1tbsp cacao powder into the remaining batter. Cook like previous cooked pancakes. 5. For the toppings, mix together remaining raspberry liquid, the 1tbsp cacao powder and the 1tbsp agave. 6. Stack pancakes, alternating flavours. Place chopped strawberries on top. Drizzle with choc-raspberry sauce. Sprinkle with cacao nibs. Enjoy!
