It's finally the mid-year holidays so I have time for some baking! These muffins were definitely a success - one trial was all they needed for my twelve year old brother to gobble them down and request for me to make some more! Perfectly moist and fluffy with not too much sweetness; I will definitely be making these quite often! I have also used raspberries instead of the strawberries and dark chocolate which was delicious! Use whatever you would like - be creative! Strawberry and Dark Chocolate Protein Muffins Ingredients: - 1 cup + 2tbsp wholemeal spelt flour - 2 scoops vanilla protein powder - 2tsp baking powder - 1/2 cup greek yoghurt - 2/3 cup milk (i used almond) - 2 tbsp coconut oil, melted - 1 egg - 5 strawberries, chopped - handful of dark chocolate chips Method: 1. Preheat oven to 180 degrees celcius 2. Combine first three ingredients in a mixing bowl. Add remaining ingredients (except for last two) and stir with a wooden spoon to combine. Stir through strawberries and chocolate. 3. Pour batter into greased or lined muffin tins. Bake until firm when pressed. Note: I baked mine for 35 minutes but they were in jumbo muffin tins and only made four. Normal sized muffin tins would take less time and would make more. |
